- 4 large Pumpkin pieces, approx 4 - 6 cm deep, peeled
- 4 eggs
- 4 slices sourdough bread
- a good, fruity olive oil
- 2 tablespoons Outback Spirit Dukkah

Preparation
1. Toss the prepared pumpkin slices lightly in olive oil and roast in the air fryer for 18-20 minutes until the pumpkin is very soft and becoming caramalised
2. In the final minutes of the pumpkin roasting, poach the eggs ensuring the yolks are still a little runny
3. Lightly toast the sour dough and drizzle with a little ol and sprinkle with a little Dukkah
4. Place a slice of pumpkin on each sourdough slice and gently 'smash' with a fork and top with the poached egg and season with Wild herb Salt
5. drizzle very lightly with a little oil and sprinkle generously with more Dukkah
