In this lovely deviation from a Caprese Salad, slices of heirloom tomatoes are topped with dollops of cottage cheese and layered with red onions, olive oil and tender herbs, and sprinkled with our savoury Wattleseed & Garlic Dukkah. Cottage cheese adds a creamy counterp[oint to the acidic tomatoes and acts like a flavour sponge amplifying the dukkah's savouriness. while adding creamy richness to this tomato salad. Yield: 4 servings
750g heirloom tomatoes, sliced ½-inch thick
Wild Herb Salt or flaky sea salt and freshly ground black pepper
1 tablespoon Wattleseed & Garlic Dukkah
¼ small red onion, very thinly sliced
2 tablespoons olive oil
2 tablespoons Worcestershire sauce (optional)
1 cup full-fat cottage cheese
⅓ cup coarsely chopped mixed tender herbs (such as chives, parsley and dill)
Grilled or toasted French bread or bagels
Arrange tomato slices on a platter and season with ½ teaspoon salt.
Scatter the red onion on top of the tomato slices and drizzle with the olive oil and Worcestershire sauce, if using
Using a spoon, dollop the cottage cheese on top.
Garnish with the herbs and Wattleseed & Garlic Dukkah, serve with bread or toasted bagels - yum.
